TASTING NOTES
With the Moose the objective is to create a Bordeaux blend with elegance and balance that can stand the test of time. In 2011 the blend consisted of Cabernet Sauvignon, Cabernet franc and Merlot. The wine has an intense dark colour, the palate shows a good tight grip of oak tannins, balanced with excellent fruit and good length. On the nose the violets are from the Cab Franc.The Cabernet Franc and Merlot lend wonderful elegance to the blend.
It should evolve well over time, and has the structure and concentration to age for 10 to 20 years.

IN THE VINEYARD
Training method: 5-wire vertical trellis
Yield: Average of 38 hl/ha and 6.3 tons/ha
Age of vines: Cabernet Sauvignon 10 years, Cabernet Franc and Merlot 12 years
IN THE CELLAR
9-10 days in closed tanks, mixed by pumping over, pressed in horizontal basket press (CA) and pneumatic press (CF and ME). Only the top 10 barrels in the cellar were selected for this wine. Maturation took place for ± 24 months in small barrels and bottled with only minimal pre-bottling filtration, sediment can be expected.
Barrel profile: 11% 1st fill, 11% 2nd fill, 22% 3rd fill and balance 4th fill, 100% French oak.
