DESCRIPTION: An unfiltered vegan friendly blend produced from the classic Bordeaux varieties was produced from hand harvested environmentally friendly grown grapes from Stellenbosch, South Africa.

TOTAL PRODUCTION: 250 BOTTLES  (750ml)  / 18 MAGNUM BOTTLES

BLEND: 85% Cabernet Franc / 10% Merlot / 5% Cabernet Sauvignon.

STYLE: Intense. Elegant. Classic.

ALCOHOL: 13.5%.

CELLARING: 10-15 years from vintage date.

NOSE: Complex. Floral, red & dark fruit, cassis, cherries, spice, and earth.

PALATE: Intense combination of red & dark fruit, hints of lavender, well balanced, silky tannins. Lingering finish. NOTE: This wine is unfiltered & 100% vegan friendly.

BOTTLING: Harvested, produced, and bottled by hand.

YIELD: Average of 38 hl/Ha and 6.3 tons/Ha

AGE OF VINES: Cabernet Sauvignon 10 years, Cabernet Franc and Merlot 12 years

IN THE CELLAR: 9-10 days in closed tanks, mixed by pumping over, pressed in horizontal basket press(ca) and pneumatic press (c.f. and me). On my the top 10 barrels in the cellar were selected for this wine. Maturation took place +/- 24 months in small barrels Nd bottles with only minimal pre-bottling,filtrstion,sediment can be expected.

BARREL PROFILE: 11% 1st fill, 11% 2nd fill, 22% 3rd fill and balance 4th fill, 100% French oak.

TOTAL PRODUCTION: 126 MAGNUM BOTTLES

TASTING NOTES:
Excellent colour, which is the result of concentration due to the low yield, nose shows dark cherry and plum, with the roasted mocha and tobacco pouch from well prepared French oak. The palate offers excellent focus and intensity, multi layered with dark chocolate and fennel underpinned by silky tannins. The wine is still young, but shows all the characteristics necessary for terrific development over time.

BLEND: 85% Cabernet Sauvignon, 15%Shiraz

IN THE VINEYARD: The vineyard was planted in 1992 and is located 150m above sea level on a north-west facing slope in the Bottelary Hills of Stellenbosch. Gravel soil offers less vigorous growth which, together with sufficient heat due to the slope and altitude, leads to ideal ripening conditions for fully ripened grapes.

TRAINING METHOD: 5-wire vertical trellis

HARVEST DATE: 11 March 2010. Harvested by hand.

YIELD: Average of 34 hl/Ha and 5.6 tons/Ha

IN THE CELLAR: Wine was matured for 21 months in small barrels. Barrels were selected to be allocated for this wine. Wine was not filtered before bottle g and only racked out of the barrels before being bottles by hand.

 BARREL PROFILE: 50% 1st fill, 25% 2nd fill and 25% 3rd fill. 100% French oak.

TASTING NOTES

The Octopus is a Bordeaux blend with elegance and balance that can matured for 10 - 20 years. The objective is to create a wine with elegance and balance that can stand the test of time. In 2010 Cabernet Sauvignon and Cabernet franc were equal  partners at 44% each, Merlot 9% and Petit Verdot making up the remaining 3%. The wine has an intense dark color, the palate shows a good tight grip of oak tannins, balanced with excellent fruit and good length. The Cabernet Franc and Merlot lend wonderful elegance to the blend. It should evolve well over time, and has the structure and concentration to age for 10 to 20 years.

The Dragon is a Bordeaux blend with elegance and balance that can stand the test of time. In the 2015 vintage Cabernet Sauvignon was the major partner at 50%, with Cabernet Franc 40% and Merlot the balance at 10%. The wine has an intense dark color, the palate shows a good tight grip of oak tannins, balanced with excellent fruit and good length. The Cabernet Franc and Merlot lend wonderful elegance to the blend. The wine should evolve well over time, and has the structure and concentration to age for 10 to 20 years.

TASTING NOTES

Made in a classical style, the Wolf has the potential for decades of ageing. The wine has a dark color. Cloves and lead pencil aromas are from the Cabernet Sauvignon, while the Cabernet Franc and Merlot lend wonderful elegance to the blend. The palate shows a good tight grip of oak tannins, balanced with excellent fruit and good length. A great companion for lamb shank or oxtail. It should evolve well over time and has the structure and concentration to age for 10 to 20 years.
